Day 1.
- Lunch: Veggie & Hummus Wrap: Spinach, cucumber, bell pepper, and shredded carrots wrapped in a large flour tortilla with garlic hummus.
- Dinner: Fajita Bowls: Chicken or black beans, sauteed onions, and peppers, topped with jarred salsa and avocado.Snack: Apple slices and almond butter.
Day 2.
- Breakfast: Breakfast Burritos: Scrambled eggs, pre-diced onions/peppers, and shredded cheddar cheese, rolled into tortillas.
- Lunch: Chicken Salad Pockets: Canned chunk chicken mixed with mayo and relish, served in pita pockets.
- Dinner: Pesto Pasta with Chicken Sausage: Boil rotini, stir in a jar of basil pesto, and add sliced pre-cooked chicken sausage (check labels for chicken/turkey only).
- Snack: Trail mix.
Day 3.
- Breakfast: Eggs and blackbeans (left over from yesterday's lunch, and potatoes.
- Lunch: Mediterranean Chickpea Salad: Canned chickpeas, diced tomatoes, cucumbers, and feta cheese tossed with olive oil and lemon juice (stores well in the cooler).
- Dinner: Potatoes & Chicken Breast: Wrap diced sweet potatoes, onions, and chicken in heavy-duty foil. Cook on your gas stove (or over coals) with a little butter and herbs.Snack: String cheese.
Day 4.
- Breakfast: Egg & Cheese Sandwich.
- Lunch: Tuna & Crackers: Individual tuna pouches paired with whole-grain crackers and a side of cherry tomatoes.
- Dinner: Black Bean & Corn Quesadillas: Tortillas filled with rinsed black beans, corn, and cheese, pan-fried in the skillet until crispy.Snack: Orange slices.
Day 5.
- Breakfast: Eggs and Muffins.
- Lunch: Creamy Tomato Soup: Heat a carton or can of tomato soup on the stove and enjoy with grilled cheese sandwiches.
- Snack: Remaining trail mix or fruit.
